Job Description:
To ensure that the Windermere Jetty and Blackwell Café offer and presentation exceed the needs of our visitors and is of the highest standard. You will lead a diverse team having day to day responsibility for providing a food offer and seasonal menus to suit our varied customer base, including special events. Working with colleagues, you will develop the Café at Windermere Jetty as the destination Café on Windermere.
Key Responsibilities:
- Through your attention to detail, research and planning, you will oversee the development of outstanding seasonal menus, suited to the needs of our varied customer base.
- Working with colleagues, you will be pro-active in anticipating demand for catering. You will be responsible for refreshing and changing menus seasonally.
- Work with quality local suppliers, enabling unique menu offers which embody the Lakeland Arts vision and values.
- Through your creative flair you will influence and train the team to deliver to your exacting standards seven days a week and when you are not present.
- You will have specific responsibility for all developing menu planning, costing, pricing, gross margin, ordering and training of the team.
- Ensure sufficient kitchen staff are in place at all times through effective recruitment, staff development, rota development, holiday and sickness management and provide an accurate summary of the time-sheets to payroll.
- Manage all procedures and processes associated with running a Kitchen and Catering operation, including, but not restricted to controlling food stock, cost control measures, labelling, storage, waste management, delivery procedures, cleaning schedules, temperature checks, maintenance logs, suppliers management and staff training records.
- Working with the management team, lead on menu arrangements for special events, such as exhibition openings, weddings, lectures and private functions, ensuring a relevant high standard offer is delivered.
- Working with colleagues, create imaginative menu packages for meetings, private functions and outdoor events and for marketing initiatives. Ensure all menus are costed effectively.
- Work with the management team and EPOS / CRM system to ensure the operation is cost effective by controlling expenditure, managing stock carefully, and providing appropriate management reports demonstrating effective and efficient management of the Kitchen.
